Arbi (Taro /colocasia root) ki Sabji:
Ingredients :


Arbi (Taro/colocasia root) , ½ kg (hard boiled)
Refined Oil/Vegetable oil, 3 tbsp.
Cumin seeds, 1tsp
Onion , 1 medium sized , finely chopped
Ginger paste , 1tbsp
Garlic paste , 1tbsp
Dry red chili, 1
Green chili, finely chopped (as per paste)
Tomato, 1 small diced.
Coriander powder, ½ tsp.
Turmeric powder, ½ tsp.
Chili powder, ½ tsp. (optional)
Cumin powder , ½ tsp
Salt to taste
Chaat masala, ½ tsp
Fresh Cilantro (for garnishing ), optional

 

Procedure:

Arbi ki Sabji

Step 1 : Cut the Arbi into halves and boil them in the microwave oven for 10-12 mins (depending on the power of the microwave). Peel them on cooling and set aside. Cut them into circular pieces.
Step 2: Heat 2 tbsp. of oil in a shallow pan and fry the Arbi till golden brown, remove from pan and set aside.
Step 3: Heat 1tbsp. on oil in the same pan. Add the cumin seeds when the oil is hot and wait for it to splutter.
Step 4: Add the dried red chili by breaking into 2 pieces; add the onions and green chili and sauté for a min on medium heat.
Step 5: When the onion becomes translucent, add the ginger paste , garlic paste and sauté for another 2 min.
Step 6: Add the tomatoes and mix. Add turmeric powder, chili powder, cumin powder, coriander powder, salt to taste and mix . Fry the mixture till it becomes a paste and oil oozes from the sides .
Step 7: Add the fried Arbi to the fried masala and mix. Add ½ cup water, cover with lid and cook on low heat for 8-10 mins. Add some chaat masala and mix . Turn off the gas and let it rest for some time. Garnish with fresh cilantro.

Arbi ki sabji is ready. You can serve it with hot roti or paratha.
